J’ai la chance d’être membre d’une Amap de viande de boeuf qui me fournit régulièrement d’excellents morceaux de viande de qualité et locale !
Dans le colis, des morceaux différents dont plusieurs pièces de tranches de jarret de boeuf. Après avoir essayé la version asiatico-nigellesque, j’ai voulu me tourner vers un plat italien de Toscane, le Peposo. Ce plat est attribué aux ouvriers à la Renaissance qui produisaient le matériel pour la construction de la chapelle Brunelleschi de Florence.
J’ai utilisé la recette d’Esterelle, qui est absolument délcieuse et surtout complètement feignasse style : on met tout dans la cocotte et en route pour 3 à 4 heures de mijotage ! Même pas besoin de dorer la viande ou de la mariner. Parfait pour la maman-toujours-pressée que je suis ! Petite mention : j’ai utilisé un autre poivre plus doux que le poivre noir pour que mes petits puissent le manger sans souci, mais je vous met ici la recette avec le poivre noir. J’ai également rajouté quelques carottes pour avoir une garniture à déguster avec (et les carottes cuites avec ce mélange, c’est divin!).
Peposo de jarret de boeuf

1 jarret de boeuf (3 à 4 tranches de jarret de boeuf pour moi)

1 bouteille de vin rouge italien
-
4 belles carottes coupées en deux dans la longueur

1 boîte de passato de tomates (ou de tomates pelées à défaut)

4 gousses d’ail
-
20 grains de poivre noir grossièrement écrasés

2 pincées de sel
-
1 branche de romarin, 1 branche de sauge et 1 branche de thym
Tout mettre dans une cocotte à mijoter. Mettre le couvercle. Allumer le feu, mener à ébullition.
Baisser le feu et laisser cuire environ 3h, en pensant de temps à autre à tourner le jarret et à vérifier à l’occasion la réduction de la sauce. Garder un peu de vin pour rallonger la sauce au besoin.
C’est cuit quand la viande semble sur le point de s’effilocher. Servir avec les carottes et des tagliatelles !
